3 TBSP unsalted butter
3 TBSP brown sugar
1/2 tsp white wine vinegar
2 large onions, sliced
2 TBSP vegetable oil, divided
8 large (about 9 inch) flour tortillas
1 lb. grated smoked Gouda cheese
Heat butter in skillet over medium-low heat.
Add sugar and vinegar; stir to dissolve.
Add onion. Cook, stirring occasionally,
30 to 35 minutes, until softened.
Heat 1 TBSP oil in large skillet over medium heat.
Place tortilla on clean work surface.
Sprinkle cheese and onion over half the tortilla;
fold. Cook until cheese begins to melt, about 1 minute.
Turn with spatula and cook until slightly browned.
Repeat, adding another TBSP of oil, if necessary.
With pizza cutter, divide each tortilla into three pieces.
Serve hot.
