Zucchini-and-Tomato Gratin

3 medium zucchini
1 Tablespoon olive oil
1 Tablespoon fresh parsley, chopped
1 garlic clove, minced
1/2 teaspoon fresh thyme
1/4 tsp fresh rosemary, minced
1/4 teaspoon salt
1/4 teaspoon pepper
4 to 6 plum tomatoes
2 Tablespoons bread crumbs





Heat oven to 400 degrees F. Cut 3 medium zucchini
(about 1 1/2 pounds) into 1/4" slices.

In large bowl, toss zucchini with olive oil,
chopped fresh parsley, minced clove of garlic,
fresh thyme, minced fresh rosemary,salt,
and pepper.

Thinly slice 4 to 6 plum tomatoes.
Alternate layers of zuchini and tomatoes
in gratin dish.

Cover with foil. Bake 30 minutes. Remove foil.
Sprinkle bread crumbs and bake 20 minutes more.

Yield: 6 servings.
