New Zealand Sultana Cake

1 lb. sultanas (golden raisins)
8 oz. butter (2 sticks)
3 beaten eggs
12 oz. white sugar
12 oz. plain flour
1 tsp. almond essence (optional)
2 level tsps. baking powder





Cover Sultanas with water. Bring to boil for 10 minutes.
Drain. Add butter and stir until melted.

Beat eggs, sugar, and almond essence until light-colored.
Add to Sultanas. Then add flour mixture.
*Bake at 325 degrees for 45 minutes.
**Use 9-inch round tin and line with wax paper.
